The Apple+ English-Spanish comedy-drama series, Acapulco, blends humor, nostalgia, and emotion, with its story revolving around a Mexican man revisiting his past life memories. Máximo Gallardo reflects on his life, starting from his humble beginnings as a young pool boy at the luxurious Las Colinas resort in 1980s Acapulco to becoming a wealthy man in the present day. Thus, the series also depicts two timelines: one set in 1985 and the other in the present, where the older Máximo narrates the story.

In 1985, Máximo, now Don Pablo's assistant, made a critical error by revealing the resort's Book of Secrets to Alejandro Vera. This resulted in Diane and Don Pablo's dismissal, further challenging the resort staff's leadership. Under Alejandro's new regime, Máximo was promoted to head of operations.

Diane misses her son Chad and leans on Máximo, revealing a more vulnerable side of an old hotel guard. Sara Gallardo's queer identity becomes more apparent in Season 3, as she meets a girl she likes. Thanks to Esteban, her growing interest in debate reflects her intellectual awakening and confidence as a young woman coming into her own.

The season puts the future of the Hotel in Chad's hands, as he becomes the general manager. Diane departs from Las Colinas, revealing that she is in a relationship with Hector. Meanwhile, Maximo opts for ambition over principle, demonstrating early signs of the compromises that will define his future. He seeks reconciliation with his estranged daughter, Paloma, and reflects on the choices that have shaped his life. He hopes to mend their broken relationship. His past choices still haunt him, and he somehow blames himself for his daughter's condition. He attempts to apologize to his daughter for what he has done in the past. This suggests a positive change in Máximo, indeed.

The season culminates in a heartfelt dinner with Julia, during which Máximo expresses his desire to restore the resort to its former glory and invites her to join him. However, Julia, still hurt by past betrayals, chooses to part ways, leaving Máximo to confront the consequences of his ambitions.
