The restaurant owner, Stephanie's boyfriend, Mike, works as the head chef. He had no culinary training, but after Stephanie purchased the restaurant in 2023, he took over as head chef.
Confronting him about one of the issues, Gordon Ramsay told him that watching him was like watching his five-year-old playing with Lego.
"Chef Mike? You're the head chef. Watching you is like watching my five-year-old putting Lego together. You're just defrosting s*it, cross-contaminating it, and sending it. Have you any idea what you're doing?" asked Gordon Ramsay.

Gordon Ramsay's Secret Service Episode 4 featured Gordon Ramsay heading to a once-popular seafood restaurant located in Maryland. After the current owner, Stephanie, purchased it in 2023, people close to her took over the essential roles. Stephanie herself started as a bookkeeper and worked there for a few years. She has also worked as a server there, and later purchased it in 2023. It worked out, but she had a $1.5 million loan, which added more pressure to her plate.
As for the restaurant, her best friend Cristan started as General Manager while her mother Sharon manages the books. Stephanic's boyfriend, Mike, took over as the head chef. There have been concerns over Mike's work as the head chef, as he doesn't have any formal culinary education.
Gordon Ramsay's Secret Service Episode 4 features Gordon making his way into the kitchen through the basement. He finds many issues while uncovering the secrets of the kitchen. There was moldy chili in the refrigerator, which had been there for quite a few weeks.
Additional issues, including frozen mac and cheese, crab, and shrimp, were also uncovered. Witnessing all such items kept frozen, Gordon Ramsay was shocked because the restaurant was right across the sea. He also came across many other issues that needed immediate attention.
Later on in the episode, when he arrived at the restaurant, he confronted the head chef, Mike. He asked him about defrosting and how he has been contaminating it.
Gordon Ramsay then asked Mike:
"What does that mean, a shellfish allergy? Mike?
Seeing him hesitant about it, Gordon added:
"It means your throat could close up, heart palpitations, seizures. I'm just glad you haven't f*cking killed anybody."
Further in Gordon Ramsay's Secret Service Episode 4, he opened up about the violations and major issues in the kitchen that needed to be worked on right away.
