The reward is supposed to be a harmless break but the music they choose is not calm or gentle. It is a free and unpredictable style that mirrors how the characters are starting to behave. Helly choosing "Defiant Jazz" is not just a random pick. It is the show telling us that something inside is shifting. You can feel that she definitely wants more than what Lumon allows.

The music in this scene of Severance is also important because the track used is Shakey Jake by Joe McPhee. It has a restless sound that doesn't settle and that fits the moment perfectly. The innies are doing the same thing. They are beginning to question what they are told and they are becoming more confident about their feelings or decisions. This is why the title works so well.
