The Great British Bake Off Season 16 Episode 7 aired on October 14, 2025. The remaining bakers went through the Meringue Week's Signature Challenge, Technical Challenge, and the Show-stopper.
The first one was Signature Challenge, featuring the remaining six bakers. They were tasked with baking mini meringue pies. They had to bake 12 mini pies in two hours.
Later, when The Great British Bake Off judges tasted the pies, they enjoyed and appreciated many bakers' pies. Two of the bakers, Jasmine and Toby, also received a legendary handshake from Paul Hollywood.

The Great British Bake Off Season 16 Episode 7: Highlights from Meringue Week's Signature Challenge
The latest The Great British Bake Off Season 16 Episode 7 started with the judges and show hosts revealing the Signature Challenge. For that, bakers had to bake mini meringue pies.
"Now, for your Signature Challenge today, the judges would love you to make 12 mini Meringue pies. Your pie should be made with a buttery shortcrust pastry with a tasty filling and an exquisite meringue topping," announced the hosts.
The bakers were given two hours to finish the Signature Challenge. This included Jasmine, Lesley, Iain, Tom, Aaron, and Toby.
As the bakers got started with their pie preparation, judge Paul Hollywood talked to the cameras about the challenge. He noted that the bakers could choose from various meringues such as Swiss, Italian, French, and more.
"For me, the perfect meringue pie has a really crisp pastry," shared Prue Leith.
The Great British Bake Off judge noted that bakers could add their choice of fillings. The obvious would be fruit or curd. They could also opt for frangipane and set custard. She shared that they should not be "too gluey." The judge added that it was a tiny little thing, but it was very difficult to do.
While the pies were in the oven, the bakers worked on their fillings. They chose flavors for the toppings of their choice. With fifteen minutes left, they started assembling their pies with the fillings and toppings.
Bakers' pies for the Signature Challenge were:
- Jasmine's Raspberry & Passion Fruit Meringue Pies,
- Lesley's Lemon & Raspberry Meringue Pies,
- Iain's Lucky Rhubarb Meringue Pies,
- Tom's Rhubarb & Strawberry Meringue Pies,
- Aaron's Almost Mont Blanc Meringue Pies,
- Toby's Apple Lattice Meringue Pies.
Soon, after the challenge ended, The Great British Bake Off judges arrived to taste mini meringue pies. They praised Tom's pies. They noted that they were not too sweet. Lesley received appreciation for her lemon curd. Prue noted that they were absolutely delicious. Paul mentioned that the pastry needed a bit of work.
The next baker was Jasmine.
"Absolutely perfect," reacted Prue Leith.
She talked about the crispiness, passion fruit's strong flavor, bits of raspberry, and the creaminess of meringue. After Paul Hollywood also enjoyed Jasmine's mini pies, she received a handshake from him.
While Paul appreciated Aaron's pies' taste and sweetness, Prue mentioned that they needed a bit more chestnut. She noted that the combination was lovely. After tasting Iain's Lucky Rhubarb Meringue Pies, Prue noted that it was complicated to make them. However, judges noted that everything "went really well together."
"Really well. It's lovely," Prue said.
The next baker was Toby. Judges told him that his pies were lovely and sharp. Prue Leith appreciated the pastry and the meringue. Toby also received a legendary handshake from Paul Hollywood.
