The Great British Bake Off Season 16 Episode 9 aired on October 28, 2025. The latest episode was part of the Patisserie Week.

The remaining four bakers participated in the first challenge of the week, the Technical Challenge. For that, the bakers had to bake a French framboisier. They were tasked with baking a light genoise sponge. It should also have pistachio crème mousseline and raspberries.

Starting from the first step, bakers faced various issues. Two of them couldn't get the required shape, while three of them couldn't make the sugar dome. The Technical Challenge ended with blind judging.

The Great British Bake Off Season 16 Episode 9: What happened during Patisserie Week's Technical Challenge?

The recently released The Great British Bake Off Season 16 Episode 9 started with the remaining four bakers. This included Jasmine, Toby, Aaron, and Tom. For the semi-final episode, the Technical Challenge was set by Paul Hollywood.

When the hosts asked him to share word of advice for bakers, he said:

"This is about intricacy and delicacy. And you can make a mistake very, very easily."

The Great British Bake Off judges were requested to leave the tent as it was to be judged blindly.

"For your Technical Challenge, Paul Hollywood would love you to make his take on exquisite French framboisier inspired by his many trips to Paris. The judges are looking for a light genoise sponge filled with pistachio crème mousseline and fresh raspberries. But that's not it."

The bakers also had to have an exquisite sugar glass dome to house their dessert. To do all that, the bakers had two and a half hours. The narrator revealed that this was the most complicated Technical Challenge of the season.

After stepping away from the tent, the judges talked about how difficult the challenge was going to be. Bakers confessed about how they had never made a mousseline before, while some talked about genoise sponge.

For the last part, The Great British Bake Off bakers were supposed to make a transparent sugar dome. Everyone struggled through that and had to go back and make it again. Tom somehow managed to have a dome. But when he went to put it in the freezer, it broke.

"It's absolutely gutting," reacted Tom.

Aaron's mousseline split while he was getting it out of the mold. Toby's mousseline started to flow the pistachio crème when he demolded it. Soon, judges arrived for blind tasting and saw one of them with split mousseline (Aaron's) and the other one (Toby's) with crème poring outside.

Jasmine's mousseline was well set and held its shape. Judges tasted it and appreciated.

"Nothing wrong with the cake, except it's missing it's dome," noted Prue Leith.

Toby's mousseline almost fell off, and some parts were left. Judges tasted it and noted that it was a really good truffle. Aaron's mousseline had a dome, but it wasn't what judges were looking for. Tom's mousseline was the last one. Similar to Jasmine's, it also didn't have a dome, but it was in the required shape.

The Great British Bake Off judges ranked the mousselines from worst to best:

  • Fourth Place: Toby (Worst),
  • Third Place: Aaron,
  • Second Place: Tom,
  • First Place: Jasmine (The best).

Judges applauded the taste, texture, and flavors of Jasmine's mousseline. When they asked about the sugar dome, she noted that she tried three times. But it didn't work out.
