Georgie & Mandy's First Marriage Season 1 had the daunting task of ensuring that it wasn't just Young Sheldon Season 8. It had to differentiate itself from its parent show and instead focus on Georgie, Mandy, and their families in a way that revolved around the couple's life.
The show managed to achieve this feat even though almost all of the main Young Sheldon characters, aka the Cooper family, appeared on the spin-off multiple times. Even George Sr., who died in Young Sheldon Season 7, managed to make appearances in the show. However, one member of the Cooper family did not appear in Georgie & Mandy's First Marriage Season 1.
Sheldon Cooper never makes an appearance on the show, and that is for a good reason, considering that Sheldon, being Sheldon, would've had all the attention to himself, taking the spotlight of the show away from the couple and their journey.
Sheldon Cooper is the only member of Young Sheldon who hasn't appeared on Georgie & Mandy's First Marriage Season 1- Here's why

Almost the entire Cooper family has made an appearance on Georgie & Mandy's First Marriage Season 1. Missy and Connie have appeared on the show four times, whereas Mary has been seen seven times, owing to her ongoing rivalry with Audrey, Mandy's mom. Even though the Cooper family is no longer the central family in the spin-off, it was heartwarming to see them again in the spin-off.
Even George Sr., who died in Season 7 of Young Sheldon, appeared to Georgie in his dreams during the Typhoid Georgie track, allowing Georgie to grieve his father's untimely death and also remember to take care of himself so that he can be there for his daughter. However, Georgie's younger brother Sheldon has not made an appearance on the show yet. Practically, this is because Sheldon is off to Caltech, as seen in the ending of Young Sheldon. However, there are deeper reasons why it is a creatively good decision for Sheldon not to appear in Georgie & Mandy's First Marriage Season 1.

Now that the Coopers are no longer the central family in the spin-off, the focus is on the McAllisters. It would've been very difficult to develop one of McAllister's storylines if Sheldon had been on the show. Connor McAllister was first seen on Young Sheldon and had bonded with Sheldon over their certain similarities (introverts, lack of interest in football, only cared about their chosen interests).
In Georgie & Mandy's First Marriage Season 1, Connor is played by a different actor, and his character is similar but less judgmental. Connor has been a surprising standout on the show. His manner of avoiding conflicts, caring deeply about his family, his relationship with Chloe, and his relationship with Georgie have all come together to form a surprisingly great character.

If Young Sheldon's Sheldon Cooper had been a part of Georgie & Mandy's First Marriage, it would've been difficult to separate his and Conner's character and their eccentricities and to portray the growth in Connor's character. Even though Connor's character started as somewhat of a comedic relief, his character is slowly maturing, unlike Sheldon, the socially inept genius whose emotional maturity had to be maintained, as seen on the original show, The Big Bang Theory.
Sheldon's absence on Georgie & Mandy's First Marriage Season 1 does a lot of good for the show, giving the other characters space to grow without all the focus on Sheldon. Hopefully, the show will continue to portray such beautiful character growth in the second season.
