The Great British Bake Off Season 16 Episode 7 featured an exciting Technical Challenge. For Meringue Week, an individual baker was supposed to go through the challenge. Later, based on the timings, the rest of the bakers joined the tent.

The Technical Challenge was to prepare "four perfectly risen soufflés." The bakers were given the recipe and the ingredients required for the challenge. It was a blindly judged challenge.

Hence, when the judges Paul Hollywood and Prue Leigh tasted the soufflés, they didn't know who the baker was. While judges were looking for "perfectly risen" soufflés, a couple of bakers failed to deliver that, while one of them was overly sweet.

The Great British Bake Off Season 16 Episode 7: What happened during the Technical Challenge?

The hosts requested the judges to leave the tent as the Technical Challenge was judged blindly. Soon, they asked the rest of the bakers, other than Iain, to leave the tent. He was then notified about the challenge:

"The judges would love you to make four perfectly risen soufflés."

The hosts added that they should have a raspberry Italian meringue base. Iain had one hour to finish the challenge. Away from the tent, the judges enjoyed a perfect baked strawberry soufflé. The Great British Bake Off judge Paul noted that it was prepared with the Italian method.

"You also have your egg whites whisked into soft peaks. If they take it to stiff peaks, it's gonna be quite lumpy, quite rough. Now, you're baking these for about 20 minutes," shared Paul Hollywood.

He added that if the bakers didn't get the time right, they wouldn't have the height, and then the soufflés wouldn't rise.

Listening to Paul, Prue noted that it seemed "so simple." However, there were hundreds of things that could go wrong.

While Iain was the only one in the tent, the show hosts soon asked Toby to also get started with the challenge. He was notified about making four perfectly risen soufflés.

"Oh my goodness me. I have never made a soufflé," reacted Toby.

Soon rest of the bakers, including Lesley, Aaron, Jasmine, and Tom, also joined one-by-one. Many of them confessed to the cameras that they had never made a soufflé. Tom was one of them. He added that he was a bit confused.

When Iain's soufflés were ready, the judges tasted them through a blind tasting. They didn't know he baked them. They found his soufflés to be "very, very sweet."

The next baker was Toby. The Great British Bake Off judges noted that the soufflés were not yet ready. It was because they didn't have soft peaks in the earlier stage. As a result, they had turned lumpy. Lesley's soufflés had liquid inside them as judges noted they were not baked properly. Prue Leith noted that they were over-whipped.

Aaron's soufflés were "wet" in the middle, meaning they were also underbaked. Paul noted that they were okay in terms of the flavor. But they were lumpy from the inside. The next one was The Great British Bake Off star Jasmine. Her soufflés also had liquid-y texture in the middle, but they tasted good.

Tom was the last one. Paul noted the height and said that they looked rough. Prue shared that they were too sweet. The judges also noted that the soufflés were not properly risen.

Further in The Great British Bake Off episode, judges ranked the soufflés from worst to first.

  • Sixth Place: Lesley (Worst),
  • Fifth Place: Tom,
  • Fourth Place: Jasmine,
  • Third Place: Toby,
  • Second Place: Aaron,
  • First Place: Iain. (Best).

Paul mentioned Iain's soufflés had proper height and the raspberry flavor. Later, during his confession, Iain was told that he added an extra 230grams of sugar in his soufflés. He was surprised to know that. Iain was under the impression that the recipe indicated that they had to use the remaining sugar, which they were all given in the ingredients.
