"Not just boring braised croaker": Culinary Class Wars chef Jung Ho-young opens up about his Life-or-Death Match dish

Culinary Class Wars Season 2 Episode 10 featured the One-on-One Life-or-Death Match. For that, participants who were previously teammates were turned into competitors in the next round.

For that, Chef Jung Ho-young and Chef Sam Kim competed against each other. However, since they were supposed to use the same ingredients as the previous round, their dishes turned out to be quite similar, yet contrasting in taste.

They both moved forward with preparing braised croaker. While Chef Jung Ho-young was going with the Japanese braising technique, Chef Sam Kim made it with the Italian poaching method.

Sharing more about his method, Culinary Class Wars' Chef Jung Ho-young confessed to the cameras:

"I added brewed soy sauce and simmered till glossy. That's when I added the burdock roots. I also cubed some tofu. And seared them with a torch. That way, they'll be firm on the outside but tender on the inside...in the braise. And that way, it's not just boring braised croaker."

Culinary Class Wars Season 2 Episode 10: Chef Jung Ho-young and Chef Sam Kim prepare braised croaker during Life-or-Death Match

Culinary Class Wars' Chef Jung Ho-young recalled the previous round where he and Chef Sam Kim were teammates.

"I think we had about ten different ideas, when we initially bought all of our ingredients."

Chef Sam Kim also noted that he had no idea that their ingredients and idea would pay off. Among their ingredients were two fish. Both of them took one each. They chose to prepare brown croaker as their main ingredient.

"In the first match, we had to combine Italian and Japanese cuisines. But this time, my dish will be purely Japanese," confessed Chef Jung Ho-young.

Soon, Culinary Class Wars judges went to check in on what each of the chefs was preparing. One of them noted that Chef Jung Ho-young had "abandoned" Italy. He replied that it was because he and "Italian" styles didn't get along.

"I decided to go with the most classic method for Japanese cuisine...braising. Truth is, I'm great with braising. I added cooking wine, sake, sugar, and then the fish, and started braising. The fish gets a bit tender as it absorbs the sweetness," shared Chef Jung Ho-young.

He also added brewed soy sauce and burdock roots. He also cubed some tofu and seared it with a torch. They would be firm on the outside and tender on the inside. With such ingredients added to his dish, it won't be just a "boring" braised croaker.

Similar to the team match, he didn't want the croaker swim bladder to go to waste. So, cleaned it and prepped it. He also asked Chef Sam Kim whether he was going to use the swim bladder. He said no. He asked if he would give that to him.

After Culinary Class Wars' Chef Sam Kim told him he could have it, he also got it. He couldn't believe that he had "wasted" it.

"I'm making steamed croaker swim bladder again. In the first match, I was planning to stuff the bladder whole, but it kept splitting from all the filling. This time, I decided to cut it. And then I was able to fit more filling inside," recalled Chef Jung Ho-young.

The judges arrived at Chef Sam Kim's counter. They asked him about his dish. Chef noted that he was making the same dish as the previous round, but in his own style. He meant less Japanese and more Italian, opposite to Chef Jung Ho-young.

Chef Jung Ho-young noted that his and Chef Sam Kim's dishes would have contrasting flavors.
