Among the recent K-drama rom-coms is The Potato Lab, focused on the journey of a quirky and passionate researcher who's devoted over a decade of her life to studying potatoes. She works in a quiet and remote research centre in a picturesque mountain valley.

Mi-kyung's life is comfortable but repetitive and revolves, single-mindedly, around her work, which also includes a secret side project for creating a perfect new potato type named after her.

However, her quiet life is soon disrupted by the arrival of So Baek-ho, a serious and regimented executive with the Wonhan Retail corporation, on the island, who is now the new Executive Director of the Institute.

The corporation has taken ownership of the potato lab only recently. And now, they want to assess its value, which might even include shutting down the lab if they deem it not worthy of funding.

The arrival of Baek-ho signifies the beginning of workplace tension and emotional displacement, because his hard-nosed corporate mentality is a far cry from Mi-kyung's enthusiastic approach to scientific research.

However, little did Baek-ho and Mi-kyung know that their relationship in The Potato Lab would gradually grow as they understood each other. The episodes not only focus on the workplace dynamics and their connection, but also balance humor for a perfect rom-com story.

The Potato Lab ending explained: Baek-ho finally owns up to his mistakes

In the last episode of The Potato Lab, Mi-kyung confronts Baek-ho about his past actions that led to her departure from Wonhan Retail. Baek-ho responds, owning up to his faults and stating that his biggest regret is that he made decisions based strictly on data without considering the human side of his actions.

He mentions being someone who doesn't even know how to interact with others, and also calls himself a "cold-hearted man". His actions had a negative impact on Mi-kyung, but she finally decides to forgive him.

However, the Potato lab expert also asks him to give her some time to process her feelings. While Mi-kyung is in Baek-ho's arms, their colleagues switch on the lights and start teasing them about their growing closeness.

The lab is thrown into a panic when 500 tons of potatoes (which were improperly stored) end up getting wasted. Baek-ho and Mi-kyung act quickly to locate more potatoes from their local farmer contacts. They work their way to Kang Dong-won, a businessman with a military past.

Baek-ho knew Kang from a prior acquaintance and was able to successfully procure 98 tons of potatoes from him, which helped the lab with its potato shortages. Baek-ho and Mi-kyung's professional success pushes them closer together, and they have a tender moment, which leads to a kiss.

Fast forward three years, and Mi-kyung and Baek-ho are thriving in their new life together. They’re still deeply in love, living at the USB Guesthouse, with Baek-ho now managing the finances and Mi-kyung busy with grad school.

Though they’ve left the Potato Lab behind, their passion for potatoes hasn't faded. Mi-kyung now proudly calls herself a "potato career woman," while Baek-ho holds the title of Vice Supervisor of a regional potato team.

Not only this, Mi-kyung's potato variety, MK 107, finally gains recognition from the Rural Development Administration, marking a significant achievement in her career. The Potato Lab concludes with the couple attending a community event, highlighting their personal and professional achievements.
